  • 3 eggs, at room temperature
  • 330 g (1½ cups) caster sugar
  • 1½ tsp natural vanilla essence or extract
  • 1 quantity dried mandarin powder (see below)
  • 400 g (2⅔ cups) plain flour
  • ½ tsp bicarbonate of soda
  • 150 g good-quality white chocolate, coarsely chopped
  • 150 g pistachio kernels
