  • 75 g walnuts, toasted
  • 1 blood orange
  • 220 g (1 cup) caster sugar
  • 100 ml olive oil, plus extra to grease
  • 2 eggs, at room temperature
  • 150 g (1 cup) self-raising flour
  • cream or ice-cream, to serve, optional
Blood orange topping
  • 220 g (1 cup) caster sugar
  • 185 ml (¾ cup) water
  • 2 small thin-skinned blood oranges (about 160 g each), thinly sliced (you need at least 12 slices)
