[Morocco] How to cook Quinoa Cakes
Ingredients
- 2 cups cooked quinoa (see Note)
- zest of 1 large lemon
- 4 tbsp pine nuts, toasted
- 2 tbsp sultanas or raisins
- 1 large carrot, grated
- ½ cup baby spinach, roughly chopped
- 2 tbsp mint
- 1 tbsp honey, warmed until runny
- 4 tbsp bread crumbs
- 100 g fetta
- 4 eggs
- 2 tbsp olive oil
Moroccan spice blend
- 2 tsp cumin, ground
- 2 tsp coriander, ground
- 2 tsp paprika
- 2 tsp dried ginger, ground
- 1 tsp white pepper, ground
- 1 tsp dried turmeric
- ¼ tsp chilli, ground
- ¼ tsp nutmeg, ground
- ½ tsp cinnamon, ground
