Ingredients

  • 2 cups cooked quinoa (see Note)
  • zest of 1 large lemon
  • 4 tbsp pine nuts, toasted
  • 2 tbsp sultanas or raisins
  • 1 large carrot, grated
  • ½ cup baby spinach, roughly chopped
  • 2 tbsp mint
  • 1 tbsp honey, warmed until runny
  • 4 tbsp bread crumbs
  • 100 g fetta
  • 4 eggs
  • 2 tbsp olive oil
Moroccan spice blend
  • 2 tsp cumin, ground 
  • 2 tsp coriander, ground
  • 2 tsp paprika
  • 2 tsp dried ginger, ground
  • 1 tsp white pepper, ground
  • 1 tsp dried turmeric
  • ¼ tsp chilli, ground
  • ¼ tsp nutmeg, ground
  • ½ tsp cinnamon, ground
