- 6 egg yolks
- 110 g (½ cup) caster sugar
- 1 tbsp plain flour
- 1 tsp vanilla bean paste
- 1 lemon, zested
- 185 ml (¾ cup) double cream
Poaching liquid
- 60 g unsalted butter
- 310 ml (1¼ cups) milk
- 55 g (¼ cup) caster sugar
