  • 1¹⁄₃ cups (250 g) cooked white quinoa
  • 1¹⁄₃ cups (250 g) cooked red quinoa
  • 1¹⁄₃ cups (250g) cooked black quinoa
  • 3 tbsp vegetable oil
  • 6 eggs, beaten
  • 5 mm piece fresh ginger, peeled and chopped
  • 1 clove garlic, chopped
  • 80 g asparagus, chopped
  • 80 g broccoli, chopped
  • ½ red or green bell pepper, seeded, membrane removed, and diced
  • pinch of granulated sugar
  • 2 scallions (spring onions), green part only, chopped
  • ½ tsp sesame oil
  • salt
