Ingredients
- 1¹⁄₃ cups (250 g) cooked white quinoa
- 1¹⁄₃ cups (250 g) cooked red quinoa
- 1¹⁄₃ cups (250g) cooked black quinoa
- 3 tbsp vegetable oil
- 6 eggs, beaten
- 5 mm piece fresh ginger, peeled and chopped
- 1 clove garlic, chopped
- 80 g asparagus, chopped
- 80 g broccoli, chopped
- ½ red or green bell pepper, seeded, membrane removed, and diced
- pinch of granulated sugar
- 2 scallions (spring onions), green part only, chopped
- ½ tsp sesame oil
- salt
