  • 100 g piece very fresh skinless salmon, pin-boned
  • ¼ large ripe but firm avocado, finely diced
  • ½ French shallot, very finely chopped
  • 2-3 drops Tabasco sauce
  • 1 tsp finely grated lemon zest
  • 1 tbsp extra virgin olive oil
  • 2 tbsp finely sliced chives
  • 1½ tbsp salmon roe
  • 2 tbsp whipped crème fraîche
  • baby herbs, such as parlsey or chervil, to serve
