[Vietnam] How to cook style vegetable curry with peanuts
Ingredients
- 1 stalk lemongrass, white part chopped, green part bruised
- 1 small red onion, chopped
- 2 long red chillies, sliced, plus extra to serve
- 2 cloves garlic, chopped
- 4 lime leaves, shredded, plus extra to serve (optional)
- 2 tomatoes, chopped
- 1 tbsp vegetable oil
- 2 tsp mild curry powder, such as madras
- 300 g potatoes, cut into 2 cm pieces
- 250 g carrots, cut into 1.5 cm pieces
- 325 ml (1½ cups) vegetable stock or water
- 2 tbsp fish sauce
- ¼ cup peanuts, roasted
- 150 g green beans, trimmed
- steamed rice, to serve
