Ingredients

  • 1 stalk lemongrass, white part chopped, green part bruised
  • 1 small red onion, chopped
  • 2 long red chillies, sliced, plus extra to serve
  • 2 cloves garlic, chopped
  • 4 lime leaves, shredded, plus extra to serve (optional)
  • 2 tomatoes, chopped
  • 1 tbsp vegetable oil
  • 2 tsp mild curry powder, such as madras
  • 300 g potatoes, cut into 2 cm pieces
  • 250 g carrots, cut into 1.5 cm pieces
  • 325 ml (1½ cups) vegetable stock or water
  • 2 tbsp fish sauce
  • ¼ cup peanuts, roasted
  • 150 g green beans, trimmed
  • steamed rice, to serve
