  • 1 tbsp finely chopped coriander stems and roots
  • 3 tsp tomato paste
  • 3 tsp finely grated ginger
  • 1½ tbsp lemon juice, plus extra wedges to serve
  • 1½ tbsp garam masala (see Note) or medium curry powder
  • 1½ tsp vegetable oil
  • 2 chicken thighs, skin on, bone in, at room temperature
  • salt and pepper
  • 250 g (¼ large) cauliflower, cut into florets
  • 1 tomato, chopped
  • ¼ cup coriander leaves
