[Indian] How to cook Spiced lentils with roast pumpkin and yoghurt

Ingredients

  • 500 g pumpkin, unpeeled, cut into 3 cm-thick slices
  • 2 tbsp vegetable oil
  • 1½ tsp garam masala
  • salt and pepper
  • 1  small onion, finely chopped
  • 2  cloves garlic, chopped
  • 1½ tbsp finely chopped ginger
  • 1 tbsp hot or medium curry powder
  • 1x 400 g tin chopped tomatoes
  • 2x 400 g tins brown lentils, rinsed and drained
  • ¼ cup chopped coriander leaves, plus extra to serve
  • ¼ cup natural yoghurt, plus extra to serve
