[Indian] How to cook Spiced lentils with roast pumpkin and yoghurt
Ingredients
- 500 g pumpkin, unpeeled, cut into 3 cm-thick slices
- 2 tbsp vegetable oil
- 1½ tsp garam masala
- salt and pepper
- 1 small onion, finely chopped
- 2 cloves garlic, chopped
- 1½ tbsp finely chopped ginger
- 1 tbsp hot or medium curry powder
- 1x 400 g tin chopped tomatoes
- 2x 400 g tins brown lentils, rinsed and drained
- ¼ cup chopped coriander leaves, plus extra to serve
- ¼ cup natural yoghurt, plus extra to serve
