  • 1 1/2 cups chopped onion
  • 4 tablespoons vegetable oil
  • 1 3 to 3 1/2 pound chicken, cut into serving pieces
  • 1 28-oz can chopped tomatoes
  • 1/2 teaspoon cayenne pepper, or 1 hot green chili
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground fennel seeds
  • 1/2 teaspoon ground ginger
  • salt to taste
  • 1 16-oz package mushrooms, trimmed, wiped clean and sliced
